Red Peas Soup And Dumpling

Prepartion time: 20 minutes
Soaking time:  Overnight
Cooking time:  2-1/2
Serves:  4
 
1 lb red beans
1 ham bone, pig tail or pig mouth
1 large  onion, chopped
3 cloves garlic, chopped
3 stalks celery, chopped with leaves
5 tsp  salt
Optional:  Sweet potatoes, tania, or pumpkin
8 cups water
1 cup ham pieces, chopped small
1 tsp cloves, ground
2 carrots, diced optional
1 tsp thyme
1 tbs  brown sugar

Soak pig tail and pig mouth overnight and boil to remove excess salt and to tenderize.
Wash beans and soak overnight.  Place the beans, the water they were soaked in, the ham bone, and ham pieces in a pot and cook for about 1 hour. Add all other ingredients and cook for another hour.

     Dumplings

1 cup  flour
1/4 cup cornmeal
1 tsp salt
1/2 tsp  black pepper and water
1 tsp  suger
1 tbs butter

Combine all ingredients into a stiff dough; Knead lightly. Cut into shapes and drop into soup, Cook10 minutes more.  Stir to keep the dumpling from sticking to each other.
